With the addition of Buckhorn’s very own farmer, Aiyana Green, the organic gardens have grown and developed into a higher production of food for our kitchen. A 24 foot by 48 foot greenhouse was completed in 2010, the lower garden expanded to a full circle and a large upper garden was installed in 2011. Fruit trees now line the hillside above the Toft House, over fifty chickens graze nearby and eight bee houses peacefully make us the most delicious honey. Aiyana’s vision and dedication to growing amazing food has proved integral in providing Chef Leslie Sargent with the freshest of ingredients.
